Description
‘Ukishima’ is steamed type of Wagashi (Mushi-gashi). On the first glance it looks like European Sponge Cake, however it’s fully made by bean paste. Ukishima is a mixture between European technology of making Sponge cake and Japanese traditional ingredient – bean paste. It has fluffy texture and the taste of bean paste is completely unnoticable.
‘Haruno’ means ‘Spring field’ in Japanese. It illustrate the scene where flowers start to bloom everywhere with their different colour. ‘Haruno’ consists of 2 type of Wagashi: Ukishima and Nagashi-gashi (Yokan). Yokan is made of bean paste and Agar/Kanten (co-agulating ingredient). In ‘Haruno’ it also contains salted sakura flower (shiozuke sakura-no-hana). Matcha is used to make green Ukishima.
